• 1 cup of all purpose flour

• 2 large eggs at room temperature
• 1 1/2 teaspoons of kosher salt
• 1 cup of room temperature whole milk
• A 6 cup popover pan
• A food processor or a blender
• Cooling rack
• Sharp knife
• Microwavable dish or measuring cup
• Heat resistant spoon
• Sifter
• Spoon
What to Do
• Preheat the oven to 400 degrees F
• Grease the 6 cup popover pan with the 1 teaspoon of butter kept at room temperature
• Place the tablespoon of butter in the microwavable dish or measuring cup and microwave for thirty seconds to melt. Stir with the heat resistant spoon to completely melt the butter after removing it from the microwave
• Allow the melted butter to cool before proceeding to the next step
• Place the unsalted butter in the food processor or blender
• Measure the flour and then lightly spoon it into the sifter, holding the sifter over the food processor or blender to ensure you do not lose any of the flour
• Add the salt on top of the flour and sift both into the appliance, being sure not to let any fall out. This will aerate the ingredients and ensure proper distribution of the salt, improving the finish and texture of the popovers
• Crack the eggs individually into a separate bowl to ensure they are fresh and add to the food processor
• Cover and process or blend for a few seconds to begin incorporating the eggs
• Add in the milk, being careful to distribute it all over the top of the ingredients to make total incorporation easier without over-processing the dough
• Process for 30 seconds
• Divide the batter evenly in all the cups of the popover pan, making sure that they are no more than 1/2 full, and ideally between 1/3 and 1/2 full
• Once preheated, place the popover batter onto the middle rack of the oven
• Back the popovers for 40 minutes
• Remove the popovers and place them on a cooling rack
• Pierce each popover on the top with the sharp knife, which will allow steam to escape so that they can cool
• Serve the popovers warm with butter or jam, or fill them with ham and your favorite cheese for an indulgent, protein-filled breakfast
